I have to thank my mom for giving me my first Southern Living book to help provide me with inspiration for cooking.  I of course am a huge Mexican junkie and this recipe really hit on every note.  I changed up just a few things but otherwise really stayed true to the original
Tortilla Pie:

16oz can of refried beans


2 tsp chili powder


½ tsp ground cumin


8 (8 in) flour tortillas


1 cup salsa (use your favorite kind, although chunky works best)


½ - ¾ cups guacamole (I mashed up 2 avocadoes and add a little salt and pepper)


8 oz sharp cheddar

- Pre-heat the oven to 350 degrees, then in a bowl combine the first 3 ingredients.  In a greased 9 inch pan add the first tortilla and spread with half of the bean mixture.  Next, add anther tortilla…add half of the salsa, top with another tortilla then half of the guacamole mixture, then another tortilla and half the cheese…repeat once more (expect do not top the final cheese layer with a tortilla)  Cover with foil and bake for 20 min.  Cut into wedges and enjoy!
- I recommend garnishing with sour cream, salsa, and guacamole
